Method

  1. Knead all the ingredients except the margarine in a stand mixer until the gluten network is formed.

  2. Add the margarine and finish kneading the dough.

  3. Let the dough rest for 15 minutes, covering it with a plastic sheet. Then divide as desired and shape into a braid.

  4. Let it proof for approximately 60-90 minutes at 32°C (89.6°F) with 80% humidity.

  5. Bake at 180°C (356°F) according to the portion size.

  6. Fill as desired and sprinkle with powdered sugar.
