Brewer's yeast 40g

Method

  1. Knead all the ingredients until a smooth and homogeneous dough is obtained.

  2. Let the dough rest for 15 minutes, shape it into portions of 550-600 g for 60x40 cm trays, and place in the refrigerator at 5°C to lower the dough's temperature.

  3. After 30 minutes, roll the dough out using a sheeter, perforate with a dough docker, and place on a lightly oiled tray. Oil the surface, sprinkle with coarse salt, cut with a pastry cutter, and let rise in a proofing chamber at 30°C (86°F) for approximately 45-60 minutes.

  4. Bake in the oven at a temperature of 200-220°C (392-428°F) for approximately 12-15 minutes.
