Egg Yolks 80g
Milk 40g
Flour 60g
Vanilla Paste 10g
Egg Whites 240g
Sugar 100g
Lemon Juice 20g

Method

Pancakes

  1. In the steel bowl, combine the yolks, milk, flour sieved and mixed with vanilla paste.

  2. Mix until smooth and homogeneous.

  3. Set aside. In the planetary bowl, pour the egg white and lemon juice and whisk at speed 5, adding the granulated sugar to rain until you get a soft peak texture.

  4. Gently incorporate the beaten egg whites to the previously prepared yolk mixture.

  5. Cook in a oiled pan until golden color in both side.

Assembling

  1. Warm up in the microwave any Caravella Gran Cream.

  2. Drizzle on top of the Pancakes and serve
