Method

  1. Knead the 5-Grain Supremo mix, water, honey, and brewer's yeast for about 20 minutes until a smooth and dry dough is obtained.

  2. Let the dough rest at room temperature for about 10 minutes, laminate it using a dough sheeter, and chill in the refrigerator for 20 minutes.

  3. Give the dough two four-fold turns with the mélange, let it rest in the refrigerator for 10 minutes, and shape.

  4. Place in a proofing chamber at 28-30°C (82-86°F) with 70% humidity for 60-90 minutes.

  5. Bake in a fan-assisted oven at 160-170°C (320-338°F) or in a static oven at 180-190°C (356-374°F) for approximately 20 minutes.
