Method

  1. Prepare a crumble base in the steel mold.

  2. Pour the milk, cream, and Semifreddo Base into a chilled stand mixer and blend until smooth.

  3. Whip the mixture for about 2 minutes at medium speed to avoid incorporating excessive air (semi-whipped).

  4. Fill the mold halfway and add the Strawberry Variegate to create another layer. Then, finish filling the mold.

  5. Level the surface and blast chill for 40 minutes at a temperature of -35°C.

  6. Glaze and decorate with Crumble Classic.
